Mexican Salsa
In a blender add the following and blend –

1 cup tomatoes (tomatoes in juice can) or fresh ripe tomatoes

2 Tablespoons pickled jalapenos 

½ teaspoon sugar

Handful of fresh coriander

In a large bowl add the following –

1 fresh tomato finely chopped

¼ cup finely diced red onion

 

1 Tablespoon Lime or lemon juice

½ teaspoon salt

Add the blender mixture to the large bowl and mix. Taste and add more salt if necessary.
Enjoy with corn chips, with Mexican bean nachos.
* (You may use 1 teaspoon Mexican citrus chili salt instead of 
1 Tablespoon Lime or lemon juice and ½ teaspoon salt)

 

Guacamole Dip

 

1 large ripe avocado -mash with folk

1 small tomato -Cut tomato into wedges & remove seeds and fleshy bits. Chop each wedge into cubes. (optional)

2 Tablespoons finely chopped red onion

3 Tablespoons finely chopped fresh coriander

1 clove garlic crushed

1 Tablespoon olive oil (optional)

1 Tablespoon Lime or lemon juice

½ teaspoon salt

Mix all ingredients in a bowl. Taste and add more salt if necessary.

* (You may use 1 teaspoon Mexican citrus chili salt instead of 1 Tablespoon Lime or lemon juice and ½ teaspoon salt)
